    Kitchen Experience

By: Karly Henry, Public School Nutrition Rowan University Intern

One memorable culinary experience that occurred during my public-school nutrition rotation at Washington Township was when I had the opportunity to cook buffalo meatball subs in the back of a high school kitchen. Using the recipe that I had created; I was tasked with preparing the meatballs and cooking them in the oven until the internal temperature reached 165 degrees. After baking the meatballs, I was able to toss them in a bowl with the buffalo sauce/ranch dressing mixture to evenly coat the meatballs before putting them into the roll. (Attachment 1) After assembling the meatballs into the roll, I added a handful of shredded mozzarella cheese and topped off with an extra drizzle of the buffalo ranch mixture before wrapping them and popping them back into the warmer to melt the cheese. Once the subs were ready, I offered students to sample them and provide feedback. It was rewarding to hear their honest opinions from suggestions on spice levels to thoughts on texture and flavor. This experience not only helped me work on my cooking skills but also gave me valuable insights into what appeals to different tastes, reinforcing the importance of feedback in the culinary process. I enjoyed working with all of the ladies in the back of the kitchen and seeing what goes on behind the scenes of school lunch!

On November 13, 2024, at WTHS Core, the Food Service Department with the help of our Rowan intern, Maggie Watson, launched a new program, SMOOTHIES IN THE CORE. This healthy, nutritious breakfast alternative is a complete breakfast on the go. We offer two flavors: Orange and Birthday Cake. The Smoothie Bar, other breakfast items such as muffins, Pop-Tarts, and fresh fruit are also offered.  All items are compliant with the USDA standards for the School Breakfast Program. Our high school students and staff can now enjoy a Grab N' Go option, Tuesday through Friday mornings, upon entering the WTHS Core. The Smoothie Bar is a great addition to our current breakfast program, available in the 9/10 and 11/12 cafeterias, where students enjoy a nutritious meal before they start their day. Breakfast is the most important meal of the day, and we want to ensure our students are provided nutritious, on-trend items. Our breakfasts are $2.50 for all schools and are included in the School Breakfast Program. Below are some photos of our new Smoothie Bar:

Check out our delicious Apple Crumb Dessert courtesy of Judy Arbelo at Bunker Hill Middle School. This nutritious seasonal dessert recipe comes to us from our former Food Service Supervisor, Justine Collins. The kids love this flavorful treat which is part of the lunch meal or can be bought a'la carte.
